Chef Consultant
The purpose of this consultancy is to conduct a kitchen audit and provide expert recommendations for improvement, efficiency and future staffing.

Background:
MS TCDC is a renowned Pan-African training and conference Centre based in Arusha, Tanzania, with a mission to inspire transformative leadership and sustainable development through capacity development and dialogue. The Centre hosts over 5,000 people annually from all over the world in its programmes, courses, conferences and accommodation.
MS TCDC offers a unique learning environment complemented by a full-service hospitality team, including a kitchen that serves students, staff, and guests from across the globe. To ensure our kitchen continues to provide high-quality meals efficiently and professionally, MS TCDC is seeking a professional Chef for a short-term two-week consultancy to conduct our kitchen audit.
Scope of Work:
- Assess the current kitchen operations, systems, and workflow.
- Identify strengths and areas for improvement in the current setup.
- Recommend the optimal kitchen structure (staffing levels, roles, and responsibilities) based on the Centre’s business flow throughout the year.
- Provide practical, implementable suggestions to improve the menu without increasing staff workload and costs.
- Offer insights on: kitchen safety, hygiene, cost control, quality standards, equipment maintenance, inventory management, and sustainable kitchen practices.
Expected Deliverables:
- A comprehensive kitchen audit report with findings and recommendations.
- Suggested kitchen organisational structure tailored to MS TCDC's operations.
- Proposed menu improvements with a focus on efficiency and sustainability.
- Suggested inventory management plan, tools and resources.
- Proposed cost control strategies.
- An action plan outlining specific steps to address identified issues and implement recommended changes.
Ideal Consultant Qualifications:
- A professional chef with at least 5 years of experience in institutional or hospitality kitchens.
- Demonstrated experience conducting kitchen audits or setting up kitchen operations.
- Strong knowledge of kitchen management, menu design, food safety, food costing and staff development.
- Excellent communication and interpersonal skills.
- Experience working in East Africa or with international institutions is an added advantage.
Terms and Conditions:
- The consultancy will take place over two weeks at MS TCDC in Usa River, Arusha.
- Competitive consultancy fee, based on qualifications and experience.
- Accommodation and full board will be provided for the duration of the consultancy.
- The consultant must be available on-site for the full two-week period.
